520 3 |a Electrochemical cells with a cation selective electrode (Ca-ISE, Na-ISE) versus an anion selective electrode (Cl-ISE, Br-ISE, I-ISE) as a reference electrode were used to determine the activity coefficients for electrolyte (CaCl2, NaCl, NaBr and NaI)-monosaccharide (D-mannose, D-ribose) systems in water at 298.15K. The Gibbs free energy interaction parameters and salting constants were also evaluated. The results showed that the interaction of ribose is stronger than that of mannose with these electrolytes, and the interaction of calcium ion is stronger than that of sodium ion with these monosaccharides. These were discussed in terms of the stereochemistry of saccharide molecules and the structural interaction model.
